煮法
- 湯粉:成日見有用大地魚作湯底,將河粉送魚丸。牛丸河粉喺香港等地亦相當普遍。
- 乾炒:加油配韭王以猛火炒熟,加上醬油,可配牛肉、牛腩、豬什等,其中以乾炒牛河較為常見。
- 濕炒:喺乾炒後,打上芡汁。
- 煮:煮熟後,配上上湯,可配魚丸、牛丸、雲吞等配料。
- 蒸:蒸熟後,自己點醬。
